Xantham Gum is a plant based stabilizer that has the ability to hold food particles together. Used as a thickener, stabilizer and emulsifier, it makes smoother gravies, salad dressings and sauces. Xanthan gum is excellent in smoothies, frozen desserts and sorbets. It replaces gluten in gluten-free foods, breads and baked goods. Suggestions for use in recipes: ¼ teaspoon per cup of gluten free flour in cakes, 1 teaspoon per 1 cup gluten free flour for breads, 2 teaspoons per 1 cup gluten free flour for pizza. Xanthan Gum is a soluble fiber produced from the pure culture fermentation of the microorganism Xanthomonas campestris.
